Exploring The New Nordic: Food Seasonality and Sustainability in Denmark and Sweden

This University of Minnesota study abroad program administered by the College of Food, Agricultural and Natural Resource Sciences will study the culinary movement known as the New Nordic Cuisine in Denmark and Sweden. Guidance for this journey will be the collective thoughts of Nordic chefs' approach to traditional foods, combined with a strong focus on local culture, as outlined by The New Nordic Manifesto.
This course will explore the New Nordic cuisine through on-site learning experiences in Copenhagen, Denmark and Stockholm, Sweden designed in collaboration with our DIS partners. In their exploration of New Nordic cuisine, students will be exposed to a breadth of active learning experiences (e.g., foraging for creative meals and exploring metropolitan rooftop gardens) and lectures from distinguished faculty on the intersection of food and identity in Scandinavia. Students will be encouraged early on to identify a particular interest they want to learn more about in relation to the New Nordic model and find opportunities to integrate this interest into a self-designed project for the course.
The instructor for this course, Dr. Hal DeLaRosby, and the students will be contributing to this blog throughout the travel portion of the course in May Term 2022.  Readers are invited to engage with the learners through posting thoughts and questions in the comments section.
