This University of Minnesota study abroad program administered by the College of Food, Agricultural and Natural Resource Sciences will study the culinary movement known as the New Nordic Cuisine in Denmark and Sweden. Guidance for this journey will be the collective thoughts of Nordic chefs' approach to traditional foods, combined with a strong focus on local culture, as outlined by The New Nordic Manifesto . This course will explore the New Nordic cuisine through on-site learning experiences in Copenhagen, Denmark and Stockholm, Sweden designed in collaboration with our DIS partners . In their exploration of New Nordic cuisine, students will be exposed to a breadth of active learning experiences (e.g., foraging for creative meals and exploring metropolitan rooftop gardens) and lectures from distinguished faculty on the intersection of food and identity in Scandinavia.
